Chocolate cake with shiny frosting






185 grams butter
330 grams sugar
3 eggs

375 grams flour
1 tsp baking powder
1 1/2 tsp baking soda
all the ingredients above should be sifted

3 tsp vanilla extract
80 grams unsweetened cocoa powder
1 cup of buttermilk (kulturmelk in Norwegian)

Optional ingredients if you like super moist chocolate cake

1/4 cup of oil
1/2 cup of boiling water (should be added at the end of the mixing process)





Procedure:

All the ingredients should be in room temperature for at least 30 mins.
Mix and soften the butter in a stand mixer or hand mixer.



Add sugar, mix for 2 minutes. Add egg one at a time.





Add half part of the flour ,cocoa powder and butter milk. Mix well for 2 minutes.

Add the other half part of flour,cocoa powder and butter milk. Mix for another 2 minutes.






For super moist cake: Add oil and mix, then add boiling water at the end of the mixing process. Mix well until smooth and fine.


Grease a rectangular cake form with butter and lay a parchment paper on the bottom of the form.  Transfer/pour the chocolate cake batter/mixture on the cake form and bake inside the preheated oven for 1 hour. (150*C or 300*F)




Shiny Chocolate frosting

113 grams butter
1/2 cup of unsweetened cocoa
1/2 cup milk
1 1/2- 2 cups powdered sugar /confectioner sugar
2 tsp vanilla extract
1 tablespoon coffee,optional


Procedure:

Melt the butter (medium) flame
Add cocoa powder




Transfer the chocolate paste in a stand mixer or  in a bowl (if you use handmixer). Add milk
and confectioner sugar in alternate batches using about 1/3 of each with every addition
until all the ingredients are incorporated. Add vanilla extract and coffee(optional). Mix for 3-5 minutes until soft and glossy.






If you think your icing is too runny or wet, just add more confectioner sugar.



Frosting/Decorating the chocolate cake


Take out the cake from the form when it is already cold. Level the  cake by slicing the
top part of it. Flip the cake, it means that the upper leveled part should be at the bottom, so it will be easier for us to frost the perfect flat part.





Frost the cake carefully from the top and the sides.
You can buy ready made cake decors in different colors, much better if you can make your own.  Be creative in decorating your cake.
