Sweet and sour fish ( Escabeche)

This dish is one of the favorite dishes of the Filipinos just because it is the combination of different taste in one dish:)

Here is Escabeche, my own way:)

Ingredients:

For the fish:

500g fish filet ( I used pink salmon)
oil (for frying)
salt and pepper
1 egg,slightly beaten
half cup of cornstarch or flour

For the sauce:

Here is how to make the  sweet and sour sauce .

Procedure:

Make some shallow slices on the meat of the fish filet. I make a criss cross and cube like slices.

Dip the filet into a bowl with a slightly beaten egg and coat the fishes with flour or cornstarch.

Fry in a warm oil for 5 minutes each side (medium heat) or until golden brown.

Serve the fried fish with sweet and sour sauce. Or let the sauce boil together with the fried fish to incorporate the taste of the sauce and the fish.
