Homemade Pan de Sal

Pandesal (Spanishh: pan de sal means salt bread) is a rounded bread made of flour, butter, yeast, sugar, and salt. It has become a common food in the Philippines especially during breakfast. Coffee and pan de sal during breakfast is surely a good start of the morning for the Filipino people.

Ingredients:

1 cup milk
56 grams butter (100% dairy product)
1 cup warm water(40*C)
2 tbsp  sugar (or more if you want it sweeter)
1 tsp salt
1 pack norwegian yeast(50 grams) Dry or fresh will do, just follow the exact measurement on how much yeast u need  equivalent to the flour you will use.( depends upon the country where you are living)
500-550 grams flour
bread crumbs

Procedure:

Warm the milk and butter in a pan. Melt the yeast with a little amount of boiled water just to loosen it if its dry.

I use my kitchen machine in making my pan de sal , you can also use your hands for manual mixing.

Pour the warm milk and butter in the kitchen machine bowl, followed by the warm water , sugar ,salt and yeast.

Add flour gradually and mix for around 3 minutes or until the dough looks fine and shiny.

Let it rise until it doubles it size.(in a room temperature)

Take the dough out from the bowl. Use extra flour so that it will not stick in your hands while you are forming your pan de sal.

Knead the  dough very well and divide it into two. Make a sausage like form and divide it into pieces.

Sprinkle the dough with some bread crumbs. You can also  roll the sausage  dough on the bread crumbs before cutting it into small pieces.( Look at the pic below)

Arrange the dough in the oven plate and let it rise for around 30 mins. in a room temperature.
(or until it double its size). Cover it with a cloth.

Bake the pan de sal dough in the preheated oven at 225*C (437*F) for 10 mins.

Enjoy your breakfast with coffee and pan de sal:)

Jasmin's Homemade sushi

This is my first time making sushi and I have no idea how to make it. But Jasmin,my sister, had done this many times already. So, I made her do the work and I am only her assistant:)  This is homemade and we have no proper sushi equipments but we use  other helpful stuffs to get this sushi yummy and good looking.

Ingredients:

A pack of sushi nori wrap (you can buy it in asian store)
Half glass of water with 1 tsp of sugar  or soy sauce with a little bit of sugar.
Boiled sushi rice ( around 2 cups)
5-10 boiled king prawn ( use a bbq skewer to stretch the prawn, like what u can see in the pic above)
Some crab sticks
Scrambled egg,sliced lengthwise
Avocado,sliced thinly
cucumber, sliced thinly
preserved or pickled sushi ginger

Procedure:

Wet the rice with water/sugar mixture or soy sauce with a little bit of sugar.
Do not use too much water, just enough to make the rice soft and wet.

Lay a placemat on the table and the sushi nori wrap on it. Spoon some rice on the nori sushi wrap and just scatter it evenly.

On the lower part of the scattered rice, line up all the ingredients, and it is ready to roll.

After rolling, I cut the sushi into small pieces. That all for the  Nori sushi.

And here is SUSHI NIGIRI

Spoon a handful of rice and make a form like you can see in the picture using your palm.

And then just put the prawn on top of it.

We put and lined up all the sushis we made on a plate and just use some of the remaining ingredients as garnish or decor. I make a soy sauce and lemon mixture for my dip.

Hope you will try this. Good luck and enjoy the sushi:)

Bløtkake (Norwegian Soft Cream Cake)

Bløtkake for me is Norway's national cake simply because you can find it on the cake table in every special ocassion. This is soft, creamy, fruity and not too sweet type of cake. You simple bake the cake base or bun divide it into 2-3 layers , use whipped cream for frosting with strawberry jam, banana or melted chocolate . And then just crumb coat it with whipped cream, make some swirls or any pipping technique on the outer part of it and put some strawberries or any kind of berries on the top of the cake as a finishing touch. Try this one day if you have enough time and if you want to try something new:)

To begin this cake, we need a cake bun or cake base. Now, here is a recipe of mine that is so easy and  I called this " never been failed recipe" because it has a good result and always turn out good and fluffy.

Cake bun

3 large egg
150g  refine sugar

65g flour( around 6 tbsp)
5 tbsp potato flour
3/4 tsp baking powder

2 tbsp boiled water
some orange zest

Procedure:

Whip the eggs well, add sugar and whip until the sugar became fine and fluffy. Around 4 mins.

Add orange zest.

Sift wheat flour, potato flour, and baking powder on the egg/sugar mixture and simply fold the ingredients carefully. .

Add 2 tbsp of boiled water and continue folding. Transfer the mixture into a cake form without
butter, oil or greasing.

Bake the cake in the middle of the oven in 180*C for 45-50 mins.
When the cake is done, turn the cake form up side down, using 2 glasses as support. I do this to prevent the cake from shrinking. Take the cake out from the form when it is totally cold.

Filling,Frosting and decorating the cake.

Make the filling:

We need:

300ml of whip cream for the filling (containing around 38% fat)
300ml whip cream for the frosting
4 tbsp refine sugar
strawberry jam

orange soda or sprite to soften the cake

Take out the cake from the form by simple running a knife around it and on the base of the cake.

Divide the cake into 3 equal layers. Transfer each layer on a plate and sprinkle 3 tbsp of orange soda or sprite in one layer. The reason we do this is to soften our cake bun a little bit. Do the same process with the other 2 layers.

Whip the cream for the filling which is 300ml of cream.
Transfer the cream into a cold alumminium bowl. The bowl should be in the fridge before whipping the cream to achieve a fluffy or airy whipped cream

.
Add 2 tbsp of sugar  and whip the cream for 3 mins. or when  it's on stiffed peak consistency.Do not overwhip because it will turn into butter.

Transfer the first layer of the cake on a nice cake plate that you will use in serving this cake.

Spread 3 tbsp of strawberry jam on the cake and frost the half part of the whipped cream on the first layer of the cake.

Lay the second layer of the cake on the top of the cream.  You can also mix the cream and the strawberry jam instead of layering it. I do this in the second layer of the cake.

Add 2 tbsp of strawberry jam on the remaining  whipped cream.
And simply frost it on the top of the second layer of the cake. And cover it with the 3rd layer of the cake.
On the picture below , you can see the 3 equal layers of this cake.

The last part is to whip the other 300ml cream with 2 tbsp of sugar, just like what we did on the first whipped cream. We are going to use this whipped cream as crumb coat and frosting for the final touch.

Here is the cake after the crumb coat. I simply covered the whole cake with some cream and scraped the extra cream to level it.

I used a pipping bag with a tip to pipe the remaining cream on the cake for our final touch.
I piped the cream around it and just around the top of it  to provide space in the middle for the strawberries.

I washed the berries and sliced the green leafy and hard part  and just put them on the top of the cake.
You can also slice the strawberries and arrange it on the top if you like. Just use your fantasy in decorating the cake.

Here is another bløtkake I made for my husband's bday a year ago. I used  other types of fruits on it:

That's all for now...Try this cake and hopefully the celebration of the ocassion will be awesome:)

Yummy inside and out:)

Summer Chicken Skewers

Summer is fast approaching and grilling (bbq) is a part of every summer memory. My favorite for summer bbq is chicken because of it's soft meat, light taste and a healthier option for my family. Hope you will like this recipe:)

Ingredients:

500 grams of chicken breast, cubed (whithout the skin)
a half of bell pepper, cubed (red or green)
half of onion,cubed

For the marinade:

In a saucer or bowl, combine these ingredients:

2 tbsp of soy sauce (silver swan soy sauce, filipino brand)
1 tbsp of oyster sauce
1 tbsp of sweet soy sauce
Chopped onion leaves.
Garlic powder
pepper

For the garlic oil:

3 tbsp of olive oil
3 cloves of crushed galic

Sauce for brushing:

2 tbsp of oyster sauce
1 tbsp of ready made sweet and sour sauce

Procedure:

Cube the chicken meat. Add the marinade which is a mixture of soy sauce, oyster sauce, sweet soya sauce, onion leaves and dashes of pepper and garlic powder. Set aside for at least 30 mins. or overnight.

For each skewer, alternate a piece of chicken with a piece of vegetable.

Make a garlic oil  by just mixing 3 tbsp of olive oil and 3 cloves of crushed garlic. Brush the garlic oil on the chicken skewer which produces a garlic aroma. Brush garlic oil on the bbq rack before grilling to avoid sticking.

Bbq the chicken skewer in a medium heat 5-8 mins on each side. Brush the bbq with the sauce before taking it out from the grill. Let it stay on the grill for 1 min. on each side. Done:)

Serve it with some fresh green salad or any kind of fresh taste salad that you like.

Voila!! Enjoy grilling and enjoy the summer with your family:)
