Summer Chicken Skewers



Summer is fast approaching and grilling (bbq) is a part of every summer memory. My favorite for summer bbq is chicken because of it's soft meat, light taste and a healthier option for my family. Hope you will like this recipe:)



Ingredients:


500 grams of chicken breast,cubed (whithout the skin)
a half of bell pepper,cubed (red or green)
half of onion,cubed


For the marinade:

In a saucer or bowl, combine these ingredients:

2 tbsp of soy sauce (silver swan soy sauce,filipino brand)
1 tbsp of oyster sauce
1 tbsp of sweet soy sauce
Chopped onion leaves.
Garlic powder
pepper


For the garlic oil:

3 tbsp of olive oil
3 cloves of crushed galic


Sauce for brushing:






2 tbsp of oyster sauce
1 tbsp of ready made sweet and sour sauce


Procedure:



Cube the chicken meat. Add the marinade which is a mixture of soy sauce,oyster sauce, sweet soya sauce,onion leaves and dashes of pepper and garlic powder. Set aside for at least 30 mins. or overnight.




 For each skewer, alternate a piece of chicken with a piece of vegetable.




Make a garlic oil  by just mixing 3 tbsp of olive oil and 3 cloves of crushed garlic. Brush the garlic oil on the chicken skewer which produces a garlic aroma. Brush garlic oil on the bbq rack before grilling to avoid sticking.

Bbq the chicken skewer in a medium heat 5-8 mins on each side. Brush the bbq with the sauce before taking it out from the grill. Let it stay on the grill for 1 min. on each side. Done:)







Serve it with some fresh green salad or any kind of fresh taste salad that you like.

Sesame Chicken




The dish involves chicken pieces that are boned, battered, and deep-fried, then dressed with a translucent, reddish-brown, semi-thick, sauce made from corn starch, vinegar, chicken broth, and sugar. The dish is typically topped with toasted sesame seeds, hence the name Sesame Chicken.


Ingredients:

2 tbsp of oil
1 onion,cubed
3 cloves of garlic
carrot,sliced
bell pepper,sliced
green beans, sliced
5-10 pineapple chunks
2 tbsp sesame seeds

Other optional ingredients:

Onion leaves, chopped
coriander leaves







DEEP FRIED CHICKEN

500 grams of chicken meat,cubed
salt and pepper to taste
1 beaten egg
Mix all the ingredients writted above

4 tbsp flour
2 tbsp cornstarch
salt and pepper
Mix all the ingredients written above

Oil for frying

SESAME SAUCE

1 cup chicken stock
2 tbsp sugar
1 tbsp vinegar
2 tbsp oyster sauce
2 tbsp soy sauce
2 tbsp cornstach
Mix all the ingredients written above




Procedure:

DEEP FRY THE CHICKEN

Cube the chicken meat, mix with salt and pepper to taste.
Beat the egg and add it on the chicken. Mix well.





In another bowl, mix cornstarch,flour, dashes of pepper and salt.
Coat the chicken meat with the flour mixture and deep fry until golden brown.








MAKE THE SAUCE

Mix all these ingredients in a bowl:

1 cup chicken stock
2 tbsp sugar
1 tbsp vinegar
2 tbsp oyster sauce
2 tbsp soy sauce
2 tbsp cornstach



Set aside the sauce.



LET'S MAKE SESAME CHICKEN

Heat the oil in a pan, and saute onion and garlic.



Add the mixture for the sesame sauce and boil until it become sticky.
Stir constantly.





Add the fried chicken. Stir and add carrots, beans,bell pepper, pineapple and sesame seeds. Adjust the taste of the sauce, add  more sugar if you like it sweeter or chili if you like spicy taste.
Simmer for 2 minutes in a low heat.







Serve with rice:)

Pansit ( Stir fry rice noodles)



Pansit is made of rice noodles and it is stir fry together with meat and vegestables.  Noodles were introduced into the Philippines  by the Chinese and have since been adopted into local cuisine. The term pansit is derived from the Hokkien, a chinese dialect " pian i sit"  which means "something conveniently cooked fast".

There are many ways in making pansit and Filipinos all over the world has their own twist. Today, Mariella will show you how to make pansit with chicken and prawns in our own way:)  We hope that you will like our version:)



This recipe is good for 4-5 persons.


Ingredients:



2 tbsp oil
3 cloves of garlic, minced
1 small onion, sliced

200g chicken breast, sliced thinly and marinated in 1 tsp of soy sauce and 1 tsp oyster sauce

10 pieces prawns, cleaned and peeled
1/2 cup of chicken stock ( or water with 1 chicken cube)
2 tbsp soy sauce
2 tbsp oyster sauce
60 grams of egg noodles (optional)
200 grams rice noodles (ris vermicelli in Norwegian)
1 carrot, sliced in strips
1/2 bell pepper, sliced (green or red)
10 pieces of snow peas
scallion, sliced
100 grams of  cabbage, sliced thinly (I used chinese cabbage)


I used this rice vermicelli noodles or also known as glass noodles Longkou Vermicelli .
And this for the egg noodles Cucina Filipina Flour Stick.
You can buy these types of noodles in any Asian store.








Procedure:


Soak the rice noodles   in a bowl with lukewarm water. Take it out from the bowl when it's already soften.




Heat the oil in a pan and saute garlic and onion.


Add chicken and prawns and let it simmer for 3 minutes in a high heat.






Add 1/2 cup of chicken stock or water with chicken cube followed by the soy sauce and oyster sauce.
Let it boil and add egg noodles and simmer for 1 minute.






Add vegetables but save some for garnish later when you will serve the pansit.
Add  rice noodles and stir until all the ingredients incorporate with each other. Let it simmer for 2 minutes.






The veges should be crunchy and should not be over cooked.





Done!!!

Chicken Menudo



Hi everyone!  I am going to show you how to make "chicken menudo". This is a request from a good friend of mine who is always following my blog. Thank you Te Weng,this is for you :)

Menudo is a traditional Filipino stew. We can use any kind of meat like pork,chicken, and beef to make this dish." Menudo" is a Spanish word which means " often"  It seems like this dish was oftenly cooked by the Spaniards or the Filipino during the time they were colonized by the Spaniards.

One of the important  ingredients in this dish is  pork or beef liver. My family don't like liver so I omitted it . And there is also one thing that they dont like and it is "tomato sauce"  because of it's sour taste. When I am cooking a food with tomato sauce on it, I only add a little amount of tomato sauce or sometimes  I used catsup and fresh tomatoes instead.

We can personalize our own cooking, we can add, ommit ,substitute and adjust. 
Add the ingredients that we like, we can ommit the ingredients that we don't like .Substitute something to the ingredients that we don't have. And lastly, adjust to the taste that we like. If we can do this, then we can improvize and personize our own way of cooking:)


 Ingredients:






2 tsp of oil
3-4 cloves of garlic, minced
Half onion, diced

300-500g chicken breast,cut into cubes or diced (I used 2 chicken breast without skin)
Marinate the chicken meat with 1 tbsp of soy sauce and 1 tbsp of oyster sauce for best result/taste.

200-300g or pork/beef liver, diced (optional)

1 and a half tomato+ 1tsp tomato catsup ( 1/2 cup of tomato sauce if u like)
1 1/2 cup of water with 1 chicken cube ( you can use chicken stock if u have)
2 big potatoes, diced
2  big carrots, diced
1 tsp soy sauce
1 tsp oyster sauce
4-5 hotdog sauges, sliced
1 Bell pepper ,diced ( half green and half red for a colorful menudo)
scallion or onion leaves, sliced
raisins (optional)
green peas (optional)
1 bay leaf (laurel) (optional)
1 tbsp of cornstarch ,diluted in water ( if you like to thicken the sauce of menudo)
1 tsp of sugar,optional (Filipinos love a little sweet taste on their dish)
salt and pepper to taste


Procedure:

Heat the oil in a pan and saute garlic and onion.
Add the marinated chicken (and the liver if you like). Stir and cover the pan. Let it cook for 5 mins.










Add tomatoes and catsup (or tomato sauce). Stir. Add the water with chicken cubes (or the chicken stock).








Add potatoes,carrots, oyster sauce and soya sauce. Cover and cook for 7 minutes.






Add bell pepper, sausages, scallions and raisins (or the other optional ingredients like sugar,green peas and bay leaf). Stir and add the diluted cornstarch to thicken the sauce. Cover and let it cook for 2-3 minutes or until the sauce is thicken.
Adjust the taste by adding salt and pepper.









Done!! Serve with rice or bread.

Oven grilled chicken

Ingredients:





5 chicken breast
half of a small onion or shallot (cubed))
3 cloves of garlic(chopped)
1/4 part of red or green paprika (cubed)
3 tbsp of orange juice
3 tbsp of oyster sauce
3 tbsp of soy sauce (or more if you want)
half tbsp of sugar
salt and pepper to taste

Procedure:

1. Mix all the ingredients with the chicken breast and marinate for 30 mins-1hr.




2. Grill the chicken in the oven for 30 mins.


3. After 30 minutes, the chicken will produce juice or liquid on its own. Pour the juice of the chicken in a small sauce pan .


4. Add 1 tbsp diluted cornstarch or potato flour and let it boil until it thicken. This will serve as your gravy or glaze.
  
 5. Take out the chicken from the oven and brush the glaze /gravy on it. And grill it back into the oven for 10 mins.



 6. Done...serve it with carrot rice:)
